World Famous Nut Crusted Brie



• 4 ounces brie wedge

• 2 ounces Mango Chile Glaze (see recipe below)

• 1 ounce mango, freshly chopped

• 1/4 bunch cilantro

• 1/4 red bell pepper, chopped

• 1/4 ounce sesame seed

• 4 ounces ciabatta bread

• 1 ounce puff pastry •

2 ounces chopped almonds and walnuts


Roll brie in nuts and place in the puff pastry. Bake in the oven at 350º F for 15 minutes, or until a knife or toothpick placed in the center comes out clean. Remove from the oven; top with Mango Chile Glaze, mango, cilantro, red bell pepper, sesame seed and ciabatta bread.

Mango Chile Glaze

• 1 fresh mango • 1 ounce white vinegar • 3 ounces water • 1 teaspoon sugar • 1 jalapeno, diced. Mix all the ingredients together in a blender. Use as topping for Nut Crusted Br
