Rubio’s host benefit for Birch Aquarium before Thursday opening in La Jolla

Its exterior reflects a change in color scheme from its trademark lime green to a Tuscan orange. Ken Hull, Rubio’s senior vice president, said the firm changed the color scheme to conform with the La Jolla Planned District Ordinance requiring surface colors of buildings to be “in keeping with the established character of the community.”
The newest in the chain, it also features a more upscale design with countertops and panels made of a recycled material called marmoleum, an open kitchen, and LED lighting that uses less energy.
To celebrate the opening, the restaurant will host a fundraiser on Wednesday benefiting the Birch Aquarium at Scripps. For a donation of $10 for adults and $5 for children 12 and under, the public can enjoy delicious Beach Mex cuisine, and Rubio’s will donate 100 percent of the proceeds to the aquarium.
It is the restaurant chain’s 24th San Diego location. La Jollan Ralph Rubio co-founded the company and is currently chairman of the board.
