Sugar-Spiced Salmon Hash:

4 ounces fresh salmon, cut in 1 inch pieces

½ tablespoon sugar spice*

4 ounces red potatoes, cut in ¼’s and roasted in oven until soft

2 tablespoons chopped green onions
-
½ tablespoon fresh chopped cilantro,

2 tablespoons feta cheese, crumbled

3 tablespoons spicy mustard sauce*

Heat a skillet over medium heat with 1 teaspoon of olive oil.

Season the salmon with the sugar spice, coat evenly and sear in skillet until cooked medium.

Build on a plate or in a large bowl by layering the cooked red potatoes, the cooked salmon, green onions, cilantro and feta on top of each other.

Place two poached eggs and top and drizzle with the mustard sauce.

¼ tbs paprika

2 tsp cocoa powder

½ cup chili powder

4 tbs ground cumin

1 tbs ground black pepper

3tbs kosher salt

1 tbs powdered mustard

2 tbs sugar
-
2 tbs warm water

¼ cup of mayo
Sugar spice:
Combine all ingredients and mix well.
Spicy mustard sauce:
Combine the ingredients to form a thick paste, and mix with ¼ cup of mayonnaise.
