Rakiraki Rice Bowl


• 3-4 cups rice

• 2-3 eggs, gently beaten

• Protein of choice (chicken teriyaki, sesame tofu, etc.)

• Soy sauce

Method: Boil rice until cooked.In a separate pan, fry the protein of choice over medium-high heat until done. Slowly and evenly pour the beaten eggs over the protein; cook covered until the eggs are mostly cooked (slightly runny with the edges set), shaking the pan occasionally to avoid sticking.Pour the protein and egg over the hot rice. Add soy sauce to taste.  Yield: 2 servings
