Bang Bang Crispy Kale, Orange and Grapefruit Salad

(Serves 4)

Dressing

• 1 tablespoon sugar

• 1/4 cup water

• 1/4 cup fish sauce

• 2 tablespoons rice vinegar

• 3 tablespoons fresh lime juice

• 1 garlic clove chopped

• 1 teaspoon sirarcha sauce

Salad

• 3 ounces crispy kale

• 5 ounces fresh kale

• 1 ounces green onion (juliene)

• 1 ounce pepitas

• 1 ounce carrot (juliene)

• 1 ounce daikon (julienne)

• 2 ounces cashews (roasted)

• 4 ounces orange wedges

• 4 ounces grapefruit wedges

• 1 ounce fresh shallot

• 2 ounce crispy onion or shallot

METHOD:  Mix all ingredients in a bowl, adding as much dressing as desired; serve immediately.
