The Broken Yolk’s The Mom Omelet Vegetarian

Ingredients:
- 4 large AA eggs
- ¼ cup sliced avocado
- ¼ cup sliced mushrooms
- ¼ cup sliced bell peppers
- ¼ cup sliced onions
- ¼ cup alfalfa sprouts
- 2 tbs butter or margarine
- salt (if desired)
- 1 tbs sour cream
- 3-4 tbs salsa

Cooking Instructions: In a small bowl, lightly beat eggs and add salt if desired.  Set aside.  In a medium frying pan put 1 tbs of butter.  Once melted, add in mushrooms, bell peppers and onions.  Sautee until soft.  Remove from heat and then add alfalfa sprouts and avocado.  In a separate frying pan on low heat, put 1 tbs butter.  Once melted add in egg mixture and cook until eggs set.  Then flip eggs over and add in sautéed vegetables.  Let eggs cook until bottom of omelet has set.  Then fold omelet in half and place onto plate.  Top with sour cream and salsa.
